Okay, what I'm going to try, then, is wiping out the contents of "Application Support"/"EVE Online" and replacing it with a copy of the contents of my old "Preferences"/"EVE Online 1" folder (minus chatlogs and gamelogs). I'll post here to say how that goes.

Okay, that worked. I'm no longer confronted with a blank EULA.
This is going to be a major problem, though for new Mac EVE players.
